Ingredients
- 1/4 medium onion
- 1 tbsp garlic
- 1/3 cup cooked broccoli
- 1 tsp salt
- 1 tsp ancho chili powder
- 1 tsp paprika
- 3 heaping tbsp refried beans (vegetarian)
- your favorite tortillas (at least 5)
- 1/4 cup cheese of your choosing; I used monterey jack
Instructions
- Preheat your oven to 425 degrees.
- Finely chop the onion and add to a well oiled skillet over medium heat. Saute until soft and slightly browned or about 5 minutes.
- Add the garlic and allow to cook until slightly fragrant.
- While the garlic and onion finish, roughly chop the cooked broccoli. Add to the skillet and allow to warm.
- Add seasoning to taste. I recommend the spices listed above: paprika, ancho chili powder, and salt.
- Add in the refried beans. Mix everything together well and allow to cook for about 3 minutes. Remove from heat.
- On the side, grab your tortillas, place two table spoons of the bean mix from skillet at the edge of the tortilla. Top with a sprinkle of cheese and tightly roll.
- Place each tortilla on a lined pan to go in the oven.
- Optionally, you can give a very light spray over the top of the rolled tortilla before it’s in the oven to help with quick crisping.
- Place taquitos in the oven for 12-15 minutes or until crispy.
- Once finished, allow to cool. Dip into salsa or avocado lime sauce and eat up.
